Principles of nutrition science are discussed in detail in relation to various healthcare settings. Topics of discussion include the building blocks of a healthy eating plan, therapeutic diets, and the links between poor nutrition and disease. Also covered is how to determine accurate nutrition information, nutrition across the lifespan with special considerations, the processing of nutrients and how they are utilized by the body. MyPlate.gov and other tools are used as examples in nutrition counseling scenarios. The future of nutrition is also discussed in topics like genomics and functional foods. This course is an introductory course for individuals pursuing a Dietetics major.
